Ingredients
- 200g noodles of your choice (ramen, udon, or soba)
- 200g firm tofu, cubed
- 2 tablespoons miso paste (white or yellow)
- 1 cup coconut milk or heavy cream
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 2 green onions, chopped for garnish
- Sesame seeds for garnish
- Salt and pepper to taste
- 1 teaspoon garlic powder
- 1 teaspoon ginger powder
Instructions
- Cook the noodles according to package instructions, then drain and set aside.
- In a large pan, heat sesame oil over medium heat. Add the cubed tofu and cook until golden and crispy on all sides. Remove from the pan and set aside.
- In the same pan, add the miso paste, coconut milk (or cream), soy sauce, garlic powder, and ginger powder. Stir well to combine and simmer for about 5 minutes until the sauce thickens slightly.
- Add the cooked noodles to the sauce, tossing to coat evenly. Fold in the crispy tofu and heat through for an additional 2 minutes.
- Serve hot, garnished with chopped green onions and sesame seeds.
