Ingredients
- 1 cup quinoa, rinsed
- 2 cups vegetable broth or water
- 2 cups butternut squash, peeled and diced
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon olive oil
- 1 teaspoon dried thyme
- 1 teaspoon salt, adjust to taste
- 1/2 teaspoon black pepper
- 1 cup shredded cheese (cheddar or mozzarella, optional)
- Fresh parsley for garnish (optional)
Instructions
- Preheat the Oven: Preheat your oven to 375°F (190°C).
- Cook Quinoa: In a medium saucepan, bring the vegetable broth or water to a boil. Add the rinsed quinoa, reduce heat to low, cover, and simmer for about 15 minutes or until the quinoa is fluffy and the liquid is absorbed.
- Roast Butternut Squash: On a baking sheet, toss the diced butternut squash with olive oil, thyme, salt, and pepper. Roast in the preheated oven for about 20-25 minutes, or until tender and slightly caramelized.
- Sauté Aromatics: In a skillet, heat a little olive oil over medium heat. Add the chopped onion and garlic, sautéing until softened and fragrant.
- Combine Ingredients: In a large bowl, mix the cooked quinoa, roasted butternut squash, sautéed onions and garlic, and half of the shredded cheese (if using). Stir well to combine.
- Transfer to Baking Dish: Pour the mixture into a greased baking dish and spread evenly. Top with the remaining cheese.
- Bake: Bake in the oven for 20-25 minutes, or until the cheese is melted and bubbly.
- Serve: Garnish with fresh parsley if desired, and serve warm.
